Minimal Ingredient Mondays: Chocolate Maca Cookies, Cranberry Jam Tarts and Chunky Monkey Bites

It’s been a couple of weeks since I’ve posted 5-Ingredient Mondays. In the free time I acquired by not posting I thought a lot about the purpose of 5-Ingredient Mondays and how the current guidelines match (or don’t match) the purpose. It’s a new year and I’ve decided to put a new spin on this weekly link-up party.

First of all I’ve updated the name. 5-Ingredient Mondays has been put to rest with 2013 and 2014 has given birth to MINIMAL Ingredient Mondays. The name change brings a change to the guidelines. No more counting your ingredient list to see if a recipe has less than 5 non-pantry staple ingredients. No more objective measure for if a recipe is suitable for this link-up or not. Nope, now it’s time for subjective linking-up. If you think your recipe is gluten and dairy-free and has minimal ingredients, link it up. Heck, if you’ve made a recipe with 15 ingredients but the recipe normally has 20+ ingredients, link it up! This link-up party is about celebrating gluten and dairy-free foods that are delicious and have minimal ingredients. Everyone defines minimal differently and I think that’s a good thing.

5-Ingredient Mondays…

The holidays have creeped up WAYYYYYY faster than expected and I’m mildly unprepared. Because of this I’m going to send 5-Ingredient Mondays on a mini vacation until the new year. I still hope to post some treat recipes before the year comes to an end though, so here are some teaser photos 🙂

5-Ingredient Mondays: Cranberry Pomegranate Sauce, Chocolate Peppermint Rice Crispy Treats & Chocolate Caramel Cups

I’ve had a weekend of learning. First I learned that our puppy loves snow. He was running and jumping in piles of snow today that were taller than him! Very adorable and very messy. Because of this I learned very quickly to keep a towel by the front door so he can be dried off before he drags snow all through the house. I also learned today that when my best friend visits and we go to my favourite bakery (Bunners) the freezer is my friend. Look at all the treats we picked up today:

And we got cinnamon buns too, but they wouldn’t fit in the picture. Glutinous? Absolutely. That’s why the freezer is my friend. I managed to eat two cupcakes (red velvet and banana rum) before I couldn’t handle any more sweets. My fingers are crossed that my cinnamon bun and left over cupcake freezes well so I can enjoy it in the near future. Oh, and in case you’re wondering, yes, those are finger marks in the icing of each cupcake. Who doesn’t dip their finger into the icing the second they are in arms reach of a cupcake?

Anyway, that’s enough learning for a Sunday for me, so let’s move onto 5-Ingredient Mondays. This is a place where bloggers link-up their gluten-free recipes. Happy Monday! I hope everyone had a good weekend. I know I did because I recently received my copy of Happy Herbivore Light and Lean in the mail and I spend the weekend planning out what recipes to try first. Oh the things that I find exciting 🙂 I always get excited when I get a cookbook and then I rarely actually cook out of it. I’ve decided to challenge myself and change this habit, so I will be cooking my way through the entire book. There will also be a giveaway next week related to this so make sure to come back in a few days! Anyway, I will be posting about my experience but I’m going to wait until January to start doing that. 5-Ingredient Mondays- Pesto Alfredo Pasta, Chocolate Orange Gogi Cookies & Avocado Caramel Pudding

Happy Monday! I hope everyone had a great weekend, I know I did 🙂 I went to a friends birthday celebration on Friday so I got to see some friends I hadn’t seen in a while. My best friend was also in town for most of the weekend and we had a great time together. This was definitely the most relaxing weekend I’ve had in a while, which is exactly what I needed because…

I’m starting a new position at work in 2 weeks, woohoo!!! But since it’s at the same hospital it’s not as simple as stopping one job one day and starting the next job the next day. Nope, I’ve already starting doing things for my new position AND am trying to wrap up everything from my old position. So yes, I feel completely overwhelmed and excited all at once. I will be switching from a highly discharge planning focused job to an assessment focused job (court ordered assessments to be exact!!!). So basically my brain is overflowing and it’s kind of awesome, kind of terrifying 🙂

5-Ingredient Mondays- Cucumber Soup and Roasted Cauliflower with Dates & Capers

Apparently our puppy is more like me than I thought.

We were at the vets yesterday for his last booster shot and found out our little guy has food allergies! We had to get him some ear medication for inflammation and now have to be very careful to only feed him one source of protein. Basically an elimination diet for a puppy. Shouldn’t be a problem, except he is teething and we’ve been giving him beef tendon to chew on. We’ll have to find something equally satisfying for him since beef is the most likely allergen.
