Happy Monday! I hope everyone had a good weekend. I know I did because I recently received my copy of Happy Herbivore Light and Lean in the mail and I spend the weekend planning out what recipes to try first. Oh the things that I find exciting 🙂 I always get excited when I get a cookbook and then I rarely actually cook out of it. I’ve decided to challenge myself and change this habit, so I will be cooking my way through the entire book. There will also be a giveaway next week related to this so make sure to come back in a few days! Anyway, I will be posting about my experience but I’m going to wait until January to start doing that. There are just too many holiday treats that I want to create first!
Anyway, it’s time again for 5-Ingredient Mondays, a place where bloggers link-up their gluten-free 5-ingredient recipes. Take a look at these amazing recipes that were submitted during the last link-up, yum, yum, YUM!!!!
Cardamom Eggnog from Ragdoll Kitchen
Apple Maple Sweet Potatoes from Sandi’s Allergy-Free Recipes
No-Bake Coconut Oil Fudge from Lisa’s Kitchen
This week I’m submitting my Peanut Butter Apple Hemp Cookies:
There’s my submission to 5 Ingredient Mondays, what will yours be this week?
Please review the following guidelines before linking up:
- Recipe should contain 5 ingredients or less, pantry staples excluded. So basically anything that is likely to be found in most peoples kitchen/pantry does not count as an ingredient, neither do optional ingredients. Examples of kitchen/pantry staples may include spices, baking soda, baking powder, milk/non-dairy milk, oils, etc.
- Recipe must be gluten-free. Bonus for recipes that are also dairy-free and double bonus for plant-based recipes.
- Lastly, please leave a link to your own recipe that goes to that week’s 5-Ingredient Monday post, not on this static page.
Your recipes don’t need to be from this week, but it does need to be your own recipe. I will sometimes share photos of the recipes with links back to your blog, so by sharing your recipe, you are giving me permission to use your photo and link back to your recipe.

Thank you so much for hosting and for featuring my vegan eggnog. My husband and I love it!
I know what you mean about cookbooks. I love getting new ones but I get busy with recipe testing for the blog, and the new cookbooks somehow stay on the shelf.
