Creamy coconut, sweet pineapple and spinach?
That’s right, spinach! This smoothie tastes like the tropics AND will give you enough energy to swim there!
Spinach is one of my favourite things to throw into a smoothie because you can add a lot of it without even noticing…except for the colour of course! Spinach is packed with vitamins (A, C, K, folate) and minerals (calcium, iron, magnesium, potassium, manganese). It’s also got fiber, protein and has anti-inflammatory properties.
Not enough nutrition for you? That’s why there’s also hemp seeds thrown in as well. Hemp seeds are known for their omega-3 and omega-6 fatty acids, but did you know that they’re also loaded with fiber, protein, iron, thiamine (B1), vitamin B6, folate, phosphorus, magnesium, zinc and manganese? Yup, those little seeds are serious nutrition power houses.
So how do you get all of that goodness into one tropical tasting smoothie?
Green Power Pina Colada Smoothie
A creamy and refreshing green smoothie that tastes just like a pina colada. You won’t believe how healthy it is!
Makes 1 large or 2 small servings
- 1/2 cup frozen pineapple
- 3-4 ice cubes
- 1/2- 3/4 cup unsweetened non-dairy milk (I used almond)
- 1 tbsp coconut butter
- 1 cup spinach
- 1 tbsp hemp seeds
- optional- shredded coconut for topping
- Throw all ingredients, except for shredded coconut, into a high power blender (I used my Vitamix)
- Blend until smooth.
- Top with shredded coconut, if using.
- Take a sip and enjoy the flavours of the tropics!
